Chicken Risotto with Chermoula

Product - Chermoula Blend

Cup of diced, cooked chicken, 240g pumpkin peeled and cubed, 1 tbs Chermoula, 1/2 onion chopped finely, assortment mixed vegies, 1/2 cup aborio rice, 50g feta cheese, 2 teaspoons lemon juice, 2 cups chicken stock (low salt)

Pre heat oven to 180c

Toss pumpkin cubes into some Gourmet Morsels Chermoula Blend, place on lightly greased baking tray and roast for 30 minutes. Heat Olive Oil in pan and saute the onions, add riceand mixed vegies and stir for a couple of minutes. Start adding stock, about half a cup at a time and stir. Once liquid is almost absorbed, add some more until rice is cooked through. To finish gently add to the rice, chicken cubes, feta and pumpkin and lemon juice and stir through.

Roast Chicken with Baharat Spices

Product - Baharat Blend

Next time you want to Roast a chicken, sprinkle the skin with Gourmet Morsels Baharat Spices for a Moroccan delight.

Oven Baked Southern Chicken with Coleslaw

Product - Southern Chicken Coating Mix
6 Chicken Breast Fillets, Skin Removed, Pack of Gourmet Morsels Southern Chicken Mix, 1 Egg Wash, Olive Oil Spray

Wash Chicken under running water and dip into egg wash. Coat the Chicken with Gourmet Morsels Southern Chicken Coating Mix. Place Chicken on Baking Tray and spray lightly with Olive Oil. Bake in Hot Oven for 15 minutes.

Coleslaw - finely shred white and red cabbage, red onion, carrots and celery. Combine with Low fat Coleslaw dressing.

Serves 6

***Chicken Breast Fillets can be subsituted with any type of Chicken Cut***

Cajun Chicken Salad

Product - Cajun Blend
4 Chicken Breast Fillets, skin removed and sliced into thick strips, pack of Gourmet Morsels Cajun Blend.

Simply wash the chicken breast under water and mix together with a little Gourmet Morsels Cajun Blend. Place on Baking Tray, slightly spray with Olive Oil and Bake in Hot Oven for 10 - 15 minutes or grill on a hot plate or BBQ.

Serve with a Garden Salad.

Satay Chicken/Pork Skewers with Raita

Product - Tandoori Coating Mix or Indian Chilli Dukkah with Almond

12 pre-soaked bamboo skewers, 1kg thigh chicken fillets, skin removed, Gourmet Morsels Tandoori Coating Mix, Olive Oil Spray.

Cube Chicken and place in a large bowl. Add to the bowl a pack of Gourmet Morsels Tandoori Coating Mix and Combine with the peices of Chicken. Thread Chicken onto Skewers. Grill or BBQ Skewers.

Raita - Combine 1 cup of thick plain yoghurt with 1tps minced garlic, grated lebanese cucumber and 1/4 cup finely chopped mint leaves.

Serve with Steamed Rice or a Fresh Garden Salad.

Homemade Chicken Nuggets - Finger Food

Product - Southern Chicken Coating Mix
1kg Chicken Thigh Fillets cut into quarters, 1 egg, pack of Gourmet Morsels Southern Chicken Coating Mix.

In a large bowl, add chicken pieces and egg and mix together. Coat the individual chicken pieces in Gourmet Morsels Southern Chicken Coating Mix. Pan fry or Oven Bake. Fantastic Chicken Nuggets for your next Party or kids meal idea.

For a spicier version, coat with Gourmet Morsels Chilli Chicken Coating Mix. And for something really hot, coat with Gourmet Morsels Burning Hell Coating Mix! Sure to make your eyes water!

Gluten Free Chicken/Pork Schnitzel

Product - Southern Chicken Coating Mix Gluten Free
Simply coat your chicken or veal pieces in an egg wash or sour cream and coat in the Gourmet Morsels coating mix. The recipe can be shallow fried in olive oil or grilled to perfection on a Contact Grill such as the George Foreman Grill or any similar Health Grill.

Hot & Spicy Chicken

Product - Spicy Mexican Blend
Chicken pieces, egg wash and pack of Gourmet Morsels Mexican Blend.

Lightly sprinkle Gourmet Morsels Mexican Blend onto your chicken pieces and grill on a hot plate or BBQ. Serve with Tossed Salad or mixed vegetables.

Chinese Szechuan Skewers

Product - Chinese Schezuan Blend
Chicken Breast sliced, bamboo skewers (soaked in water), sour cream, pack of Gourmet Morsels Chinese Szechuan Blend.

In a small bowl blend together some sour cream and Gourmet Morsels Chinese Schezuan Blend to make a paste. Rub the paste into diced chicken pieces and thread the chicken onto the bamboo skewers. BBQ or grill. Serve with salad or mixed Asian greens.

Mediterranean Baked Chicken

Product - Tuscan Lamb Blend
Whole Chicken (cut into 8 pieces) or 8 drumsticks. Pack of Gourmet Morsels Tuscan Lamb Blend.

Preheat oven to 180.c - Place chicken pieces in a roasting tray and liberally sprinkle top of chicken with Gourmet Morsels Tuscan Lamb Blend. Bake in oven till cooked through. Serve with Salad or mixed vegetables.

Slow Cooked Chicken/Lamb Curry

Product - Gourmet Morsels Rogan Josh Blend
4-6 servings 2½ hours cooking time, 30 min prep

2 1/2 cm fresh ginger, peeled and coarsely chopped
8 garlic cloves, peeled
4 tablespoons water
275 & 425 ml water
10 tablespoons vegetable oil
1 kg boneless lamb shoulder or stewing beef or diced chicken
2 tablespoons Gourmet Morsels Rogan Josh Blend
4 medium onions, peeled and finely chopped
6 tablespoons plain yogurt

Put the ginger, garlic, and 4 tablespoons of water into the blender. Blend well until you have a smooth paste.

Heat oil in a wide heavy pot over a medium heat, brown the meat cubes in several batches and set to one side.
Now put in the onions. Stir and fry for 5 minutes until they turn a medium brown colour.
Put in the ginger garlic paste and stir for 30 seconds.
Add Gourmet Morsels Rogan Josh Blend and stir and fry for 30 seconds.
Add the fried meat cubes and juices.
Stir for 30 seconds, now add 1 tablespoon of yoghurt, stir until well blended.
Add the remaining yoghurt, a tablespoon at a time in the same way. Stir and fry for another 3 minutes.
Now add 275ml of water if you're cooking lamb or chicken and 425ml of water if you're cooking beef. Bring to the boil, scraping all the browned spices off the sides and bottom of the pot. Cover and cook on low for an hour if your cooking chicken or lamb and 2 hours if cooking beef, (or until meat is tender.).
Every 10 minutes give the meat a good stir. When the meat is tender take off the lid, turn the heat up to medium, and boil away some of the liquid.
All the fat that collects in the pot may be spooned off the top.

Roast Pork with Rivermint Dukkah

Product - Rivermint Dukkah with Lemongrass

You may use any peice of Roasting Pork for this dish. Cut some slits into the pork and push cloves of peeled garlic into the slits. Rub the pork with Olive Oil and crust with Goumet Morsels Rivermint Dukkah. Roast in a moderate oven till cooked through. Serve with Roasted Vegetables or a Gourmet Salad.
